A TYPICAL RECIPE OF PRAIANO...
The cooking of Praiano is delicious, full of specialities in every season for all tastes and requirements, but we would particularly like to draw your attention to the fish, the pride of the people of Praiano is the Totani(squid) an ancient tradition, of excellent quality, caught by small boats : called the " I Totani Neri"( The black squids) like the fish they catch in the deepest , blackest part of the sea... (Squid and potatoe)
Ingredients (For four people) :
Clean out the squid, rinse well and cut into rings , peel the potatoes and cut into fairly large cubes. Take a large high sided frying pan and put a little oil, heat and add a clove of garlic cut into small pieces and fry until blonde, add the mashed tomatoes and a little water , then the rings of squid and potatoes, salt to taste. Cover and leave to cook for about 20 minutes, adding white wine so it does not dry out. When it seems cooked add a hot pepper and evaporate the moisture in excess , at this point sprinkle the parsley on top and serve, pleasure is assured...
